Chard, Rainbow Swiss
(Beta Vulgaris) These beautiful chard plants can range from vibrant pinks and deep reds, to bright sunshine-yellow stalks, brightening both garden spaces and salads. The greens can be picked when young or the stalks can be harvested later, and their hardiness allows them to be harvested throughout much of the winter in Oregon. Chard originated in the Mediterranean, but is beloved in many countries, such as France, where types of chard were grown specifically for the Christmas meal. Chard is still used in everything from omelets and salads, to tarts and pies.
Planting suggestions: Chard prefers cooler temperatures, full sun, and good drainage, but is tolerant of a range of conditions. Direct sow seeds 2-3 weeks before the last frost date in spring, or begin inside 4-6 weeks before the last frost date. Plant seeds ½” deep, around 6” apart, then thin to around 12” apart. Your chard should reach maturity in 30-60 days. When leaves are 8 or more inches long you can harvest the outer leaves by cutting a couple inches above the soil.
